What are the history and origin of kombucha?

Kombucha is an ancient beverage with origins dating back to 220 BC in China. It is believed to have been first used as a medicinal elixir by the Tsin Dynasty, and was later spread across Asia and Europe before being introduced to North America in the 19th century. The fermentation process of this probiotic rich tea-based drink has remained largely unchanged for centuries, resulting in its unique taste and impressive health benefits. As more people become aware of the potential health benefits of kombucha, it continues to grow in popularity today.

How is Kombucha made?

Kombucha is a complex and unique fermented tea beverage made through a process involving combining black or green tea, sugar, water, and a kombucha starter culture. The starter culture is actually a symbiotic colony of bacteria and yeast (SCOBY) that feeds off the sugar in the tea to create healthy acids, minerals, vitamins, and probiotics. As the kombucha ferments, a new SCOBY is formed on top of each batch ensuring that the fermentation process can continue in perpetuity.

At our kombucha brewery in Mandaluyong, our kombucha is usually fermented for up to 18 days. During this time the sugar gets reduced and beneficial compounds such as probiotics, antioxidants and healthy organic acids created. As it continues to ferment, our kombucha becomes naturally low in sugar as it is converted into healthy probiotics and organic acids, hence the slight tart/vinegar taste usually associated with this popular tea-based drink.

What are the ingredients in Kombucha?

Kombucha is made with a combination of brewed tea, sugar, water, and a SCOBY, which is a symbiotic colony of bacteria and yeast. While the tea used is usually black or green tea, we also use different types of herbal teas like Hibiscus (roselle) to give our kombucha that signature flavor that has made Happy Brew Kombucha loved in Manila. While sugar is an essential ingredient to make kombucha, it’s primary use is not to provide sweetness. Instead it acts as a food source for the fermentation process, during which the active yeast and bacteria present convert this into a healthy fermented drink that is naturally low in sugar.
